To make, heat your lightly-greased pancake griddle to 375°F, lightly spoon out the measured mix, and whisk it with water (the batter will become slightly lumpy; do not over-mix). Then, let the batter stand for two minutes, pour slightly less than ¼ cup of batter per pancake onto the griddle, and cook! Strawberry Chocolate Chip Pancakes: 2 cups Krusteaz Chocolate Chip Pancake Mix, 1-1/3 cups water, 2/3 cup chopped fresh strawberries. Preheat and lightly grease griddle. Whisk together mix, water and strawberries. Batter will be slightly lumpy. Pour slightly less than 1/4 cup batter per pancake onto griddle. Cook pancakes 1 – 1-1/4 minutes per side, or until golden brown, turning only once. Makes 12-14 pancakes. 4-Inch Pancakes (6-7): 1 cup mix; 2/3 cup cold water. 4-Inch Pancakes (12-14): 2 cups mix; 1-1/3 cups cold water. 4-Inch Pancakes (18-21): 3 cups mix; 2 cups cold water. Tip: For thinner pancakes, add more water. For thicker pancakes, add more mix. (1) Heat griddle to 375 degree F: Heat pancake griddle to 375 degrees F (medium heat). Lightly grease griddle. (2) Whisk pancake mix and water: Measure mix by lightly spooning it into measuring cup and leveling it off. Whisk mix and water. Batter will be slightly lumpy. Do not over-mix. Let batter stand 2 minutes. Pour slightly less than 1/4 cup batter per pancake onto griddle. (3) Cook until golden: Cook 1 – 1-1/4 minutes per side. For light and fluffy pancakes, flip only once, when tops bubble and bottoms are golden brown. High Altitude: No adjustment necessary.
