Koshihikari and Calihikari are the two varieties used in RiceSelect® Sushi Rice. These varieties set the standard for short-grain rice in Japan. Short Grain Rice.

Prep

Cooking Rice for Sushi: 1 cup rice; 1-1/4 cup water; 2-1/2 tbsp rice wine vinegar; 1/2 tbsp sugar; 1 tsp salt. Thoroughly rinse 1 cup rice in cool water. Repeat process until water runs clear. Drain well. Place rice in heavy saucepan. Add water. Bring to a boil. Reduce heat to low. Cover and simmer 20 minutes or until all water is absorbed. Remove pan from heat and let stand 10 minutes. In a small bowl stir together rice wine vinegar, sugar and salt until dissolved. Fold dressing into rice. Use immediately.
