3 cheese zucchini toast – ingredients: 4 slices of rustik sourdough bread, 1 1/2 c sliced zucchini, 1/4 c sharp white cheddar cheese chunks, 1/2 c soft brie cheese, 3 tbsp grated parmesan cheese, 2 tbsp olive oil, ground black pepper, salt. directions: season zucchini with salt and pepper. saute zucchini over medium high heat with olive oil, toast the bread, top bread with zucchini and cheeses, bake for 5 minutes at 400°f until cheeses melt
